Pooris

A bubbly bread which accompanies Indian meals.

1/2 c whole wheat flour
1 T oil
2 pinches salt
1/3 c hot water

Put flour in a bowl with oil and salt. Add water and mix to form a soft dough. Knead gently, cover with a damp cloth and leave for 30 minutes. Knead the dough again and divide into six pieces. Roll each piece into a 6 inch circle, keeping the others covered to keep from drying out. Heat a generous amount of oil in a small frying pan. Fry one of the pooris on each side for about 15 seconds until puffed and golden. Drain on paper towels and keep warm while frying the others.
