Spanikopita

2-3 T oil
1 pk frozen spinach (up to 500g, thawed and the water squeezed out) or fresh equivalent
1 tsp dill
2-3 cloves garlic, minced
1 tomato, diced
1-2 c grated soy mozza
Pepper to taste
Filo dough

Heat oil at medium, sauté garlic for a couple of minutes. Add spinach, dill and tomato, cook for a few more minutes. Add cheese and pepper. Remove from heat and let cool.

Wrap into triangles like a flag using filo dough (See Filo Dough for further instructions). Lay the spanikopita on greased trays after brushing with a mixture of:

3-4 T oil
3-4 drops sesame oil
1 tsp soy sauce

Bake at 350 for 20 minutes or until golden.
