Sweet Potato Fries

Sweet potatoes
Oil

Seasoning mix (large batch, store extra):
2 T ground coriander
1 T ground fennel
1 T dried oregano
1 T cayenne pepper (if you like spicy)
2 T salt

Peel sweet potatoes and cut into strips about 3” long and 3/4” thick. Toss with oil and spice mix (approx 1 T oil and 2 tsp spice mix for every two potatoes).

Spread in a single layer on greased trays. Bake at 400 for 30-40 minutes, turning every 15 minutes. Sweet potatoes should be softened through and lightly browned when they're done. (If you want them crisper, increase the temperature to 450 but sweet potatoes never get as crisp as fried potatoes.)
