Strawberry Shortcake Fingers

3 c strawberries, halved
1/4 c sugar
1 1/2 c flour
2 1/2 tsp baking powder
1/4 tsp salt
6 T margarine
1/2 c soy milk
Vegan whipped cream

Thoroughly mix sugar, flour, baking powder and salt. Add margarine until crumbly. While still mixing, add soy milk gradually until dough just begins to hold together.

On a lightly floured surface, roll dough into 8 long fingers. Place on greased tray, sprinkle generously with sugar, bake at 400 for 18-22 minutes until golden.

Allow the biscuits to cool. Serve topped with whipped cream and strawberries.
