Tofu Nuggets & Tofu Nugget Salad

Tofu Nuggets
1 block firm tofu, cut into nugget-size pieces
Bread crumbs or corn flake crumbs

In a bowl, mix together:

1/3 c soy milk
2 T mustard
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1 tsp parsley (opt)
1 T nutritional yeast (opt)
Dash of cayenne if you like spicy

Dip the tofu pieces in the sauce then roll to coat in bread crumbs or corn flake crumbs (you can buy these in boxes at any store) and place on a greased tray. Bake at 350 for 25 minutes, turning halfway through. Good with salads, sandwiches, or on their own.

Tofu Nugget Salad
Make large salads with lettuce, tomatoes, grated carrot and grated soy cheese and Catalina or French dressing, with Tofu Nuggets on top.
