This super healthy super easy bread recipe makes four loaves but can be halved to make two loaves. Extra loaves can be frozen.

2 ½ c soy milk
1 c wheat germ
1 c rolled oats
1 ½ c lukewarm water
2 T brown sugar
2 T yeast
½ c molasses
½ c oil
¾ c sesame seeds
4 tsp salt
3 c whole wheat flour
5 ½ c white flour

Scald milk (heat to almost boiling but not quite). Remove from heat, stir in wheat germ and oats.

Meanwhile, combine lukewarm water, brown sugar and yeast. Allow to sit 10 minutes.

To milk mixture, add molasses, oil, sesame seeds, salt. Add yeast liquid, mix. Gradually stir in whole wheat flour, then most of the white flour. Knead thoroughly, about 200 times, adding the rest of the flour as necessary. Cut dough into 4 equal pieces and shape into loaves with oiled palms. Place in loaf pans (9 x 5). Let rise 2 hours or until just above rims of pans. 

Bake at 350 for 20 minutes, then at 325 for 20 minutes.
