Carrot Zucchini Linguini

3-6 carrots, depending on size
2 zucchini
Handful of linguini (I like spinach noodles)
1-2 onions, diced
2 cloves of garlic, minced
Salt & pepper
Spaghetti sauce
Soy mozza or parmesan (opt)

Peel carrots and zucchini into long thin strips. Steam or partially boil the carrot strips for a few minutes to soften.

In a large pan, heat oil at medium-high, fry onions and garlic for a couple of minutes, then add carrot and zucchini strips and fry until browning. Add salt and pepper to taste.

Meanwhile, cook a handful of linguini and heat up a can of spaghetti sauce (add crushed chilis if you like spicy).

Mix everything together. Good with soy mozza or parmesan.
