Cheesy Cabbage Casserole

6 c cabbage, finely chopped
1 can diced tomatoes or fresh equivalent
2 c cooked rice
1 c TVP
1 tsp cumin
1 tsp cayenne
1 T crushed chilis if you like spicy
Soy cheese (mozzarella and/or cheddar)

Mix cooked rice with tomatoes, spices, and TVP. Place in a casserole dish. (Optional: add a layer of cheese here.) Top with cabbage and cover with generous cheese.

Cover and bake at 400 for 60 minutes.
