Chickpeas, Rice & Kidney Beans

1 c rice
1 can chickpeas, drained & rinsed
1 can kidney beans, drained & rinsed
Salsa
Soy cheddar (opt)

Cook rice. Stir in chickpeas and kidney beans. Serve into bowls, cover with salsa & microwave for 30-60 seconds. Top with soy cheddar if desired.
