Chili

1-2 onions, chopped
3 or more cloves of garlic, chopped
1 pepper, chopped

Heat oil in a big pot at medium high, add onion, garlic, pepper, put a lid on. Stir every few minutes until the onions start to brown. Then add:

2 cans diced tomatoes (or fresh equivalent)
1 can kidney beans, drained & rinsed
1 can black beans, drained & rinsed
1 can corn, drained & rinsed
1 c TVP
1 tsp cilantro
1 tsp basil
2 T chili powder
1 T crushed chilis (or more for extra spicy)
Dash of cinnamon (opt)
10 chocolate chips (opt)

Stir & cover, reduce heat to low and cook 2+ hours, stirring occasionally. Top with soy cheddar.
