Cook lasagna noodles until al dente.

Option 1: Chop and fry some onion and minced garlic. Add chopped cauliflower and/or broccoli and diced carrots (enough to fill two layers, about 8 c) and fry for a few more minutes, stirring. Add spices according to preference (i.e. basil, oregano, pepper, salt, crushed chilis).

Grease bottom of lasagna dish (or spread some pasta sauce) and build the lasagna with the following layers:

- Layer of lasagna noodles
- Some more sauce
- Half the veggie mix (opt: add a layer of spinach)
- Layer of soy mozzarella
- Repeat for second layer
- Top with lasagna noodles, sauce, and soy cheese

Option 2: Make the Spaghetti Sauce recipe which can be used as both sauce and filler, with spinach (opt) and soy cheese added in each layer as above.

Cover and bake at 450 for 1 hour.
