Basic Roasted Veggies

Cut a block of tofu into cubes, then chop up a bunch of whatever veggies you want (it's great with just potatoes, carrots & onions, but you can also use broccoli, cauliflower, celery, peppers, asparagus, whatever). Toss generously with oil. Sprinkle generously with some or all of the following spices and toss well:

Basil
Garlic powder
Curry powder
Parsley and/or oregano
Thyme, sage, and/or rosemary
Cayenne or crushed chilis if you like spicy
Salt & pepper

Cook in a large pan at 450 for 1 hour, stirring halfway. Can also be barbequed in greased aluminum foil packs for 45-60 minutes, turning halfway.

Serve on rice or rice noodles or quinoa or couscous etc.
